Creamy Cocoa



In honor of our first snow of the winter (finally!) I thought I'd post an old fashioned recipe for hot chocolate. My mom used to make hot chocolate this way when I was little. She'd use a big stock pot and quadruple the recipe. We'd drink it with big dollops of whipped cream and buttered homemade toast. It uses cocoa powder and sugar. It's pretty sweet, especially compared to what's vogue in hot chocolate these days, so I usually put about 1/2 the sugar in. What could be nicer than watching the snow and drinking hot chocolate?

Creamy Cocoa
makes 4 servings

1/2 c. unsweetened cocoa powder
1/2 c. sugar
dash salt
3 1/2 c. milk
1/2 c. water

Mix cocoa, sugar, salt, in a pan; stir in water. Cook and stir to boil; boil 1 minute.

Stir in milk. Heat just to boiling. Ladle into cups. Top with marshmallows or whipped cream.
