Favorite Summer Recipes - Granita



I've been loving granitas this summer. Especially pregnant. It's such a great treat, it's light and flavorful and cold. The texture is different from a slushy or frozen drink, it's more like ice shards. OK, that's not the most attractive way to describe it, I promise it's yummy. You can use any kind of juice, but I especially like to use homemade lemonade or limeade. The one pictured above is limeade. Here's what I did:

Make lemonade or limeade:
1 part lemon/lime juice
1 part sugar
4 parts water
Stir until sugar is dissolved

Pour into a 9x13 cake pan. Cover. Freeze for 3-4 hours (I did this in my deep freeze, not sure if you need to add a little time for a fridge freezer.) Take out of the freezer and scrape ice with a fork, until there aren't any solid pieces of ice, just shards. Freeze for another hour. Take out of freezer and scrape again. At this point you can eat it, or continue to freeze for as long as you want. Just scrape it before you eat. (The last one I made I had in my freezer for about a week. Whenever I wanted some I'd just scrape a little off and put in a glass.)

yum! I have totally been loving orange gatorade frozen until a slushy state. cos i am too lazy to mix mult ingredients for a real slush like yours. ;-)

I LOVE LOVE LOVE granitas!!!!!!!
I always had really good ones in Seatle, but have had a harder time finding tasy ones in Utah. Now, I'll just make my own! Thanks!
