Lemon Chicken
We had this last night for dinner. Really, really yummy and simple. Jenni of Hogie Wogie recommended it. I couldn't find lemon curd at my local grocery store, but I did make some the night before (which was also simple). Try the curd part of this recipe for lemon curd. Although it tells you to cook it in a double boiler, I used a saucepan over low heat. Thanks Jenni!

i am glad you liked it, erin. i never could find lemon curd at that local market either, i would have to go to another one or trader joe's has it sometimes, but homeade is best.
what do you serve with it? We eat Chinese food frequently and I am good at trying a bunch of different meat dishes - but I am tired of serving the same old brown rice and steamed veggies.
Yum! I'm adding this to my menu next week.
