Omelet in a Pita



(from Martha Stewart Kids) I love this. It's terribly satisfying and warm and quick.

Cut whole-wheat pita in two; toast one half (as it toasts it will open). Fill the toasted pocket with a two-egg omelet (or scrambled eggs). Add whatever you want to the omelet/eggs as they cook; green peppers, cheese, bacon, onions, mushrooms, ham, onion.

We microwave our scrambled eggs and ham, or whatever, in a bowl (just the right size) so it fits neatly onto a bagel or english muffin or toast. I hadn't thought of pita. Great idea!

Didn't you love this issue of martha stewart kids food? Everything was so great, my kids just loved looking at the pictures, so did I. All the ideas were excellent.

I'm so bummed because I couldn't find that issue of Kids in the stores here. I looked EVERYWHERE! Anyway, Erin, I am wondering if you have a great recipe for apple crisp. I have a favorite but it's in storage. If you do (or anyone else) would you mind posting it? I want to make it for my family in honor of Johnny Appleseed.

I have a really good apple crisp recipe--if Erin doesn't have one---but she probably does have a better one.

HOLD ON! I didn't see that issue! I've gotta go look now. Is it still out? This was in a past issue, about a year ago. Rebecca, what a great idea. I'll post my mom's recipe.
