Sunday Rolls


We love to have fresh rolls with Sunday dinner. This recipe is quick so I can make rolls after church and still have them for dinner.

Quick Crescent Rolls (Makes 32)
2 T. yeast
1/4 C. warm water
1 1/2 C. scalded milk (cooled slightly)
1 cube butter
4 T. sugar
1 t. salt
2 eggs
4 - 4 1/2 C. flour

Dissolve yeast in warm water (I know mine is warm enough when it is slightly warmer than what I would bathe my kids in, which is about 100 degrees. You want it pretty hot, like 110-115 degrees). Let it sit until yeast bubbles to top of water. Add remaining ingredients and mix adding more flour until dough comes together in a ball and cleans the sides of mixer. Let rise for 15-20 minutes. Roll out in 2 large circles. Cut each into 16 wedges. Brush with additional melted butter and roll up starting at thick end. Place on silpat lined cookie sheet. Let rise 20 min. Brush with more melted butter. Bake at 375 for 8-10 minutes.

these rolls are really good, i had like 7 of them yesterday. thank you erin.

I forgot to mention in the recipe that if you live in a humid climate you may need to add up to 1 C. flour. The dough should be slightly sticky, not as smooth as bread dough.

so I forgot to tell you this - but I made these into bread bowls and then served them with your potato soup. It was TO DIE FOR! The rolls were great - but I think I added too much flour because with this high altitude - I always have to add more flour and never know when to stop.
