Grilled Potatoes


My new favorite thing to grill.

Cut potatoes into wedges or rounds. Boil or microwave until nearly cooked through (but not all the way). Cover with olive oil, salt and pepper. Put on heated grill (high heat) for 10-15 minutes, turning halfway through cooking. Garnish with salt.

I also love using grilled potatoes in potato salad. You can add other grilled vegetables, like zuchinni (don't cook these before grilling) and dress with a simple vinaigrette (olive oil, red wine vinegar, a little dijon mustard). I also like to add a good bleu or goat cheese.

at least once a week jared and i make roasted potatoes in the oven that are similar to what you are talking about. I use small red potaotes and the tiny italian onions, oil, salt pepper, and roast them for about 45 minutes at 500. soo good. if we had a grill i'd try grilling them.

today on food network michael chiarelli did a grilled potato salad that was a lot like yours, he used bacon and the bacon grease for the vinaigrette, grilled scallions,mmm check it out.
