the PERFECT hamburger

From How to Grill by Steven Raichlen

Make herb butter:
mix 1 stick of butter until soft (in mixer or by hand with wooden spoon)
Add and mix until combined:
3 T. finely chopped fresh herbs (parsley, chives, basil, oregano, thyme, tarragon)
OR 1 T. dried herbs
1 clove garlic, minced

Form into a log and wrap in plastic wrap. Place in refrigerator until you are ready to use it.
(Can do this way in advance.)

Take your ground chuck or round (use ground beef with 15-20% fat content for the best burger) and form a portion into a ball. Make a depression in the center and place a slice of herb butter.


Mold the beef around the butter and flatten slightly. Season with salt and pepper.


Cook on the grill about 5-7 minutes per side. I like to grill my buns too.

Top with whatever you like: cheese, pancetta, lettuce, tomato, pickle, grilled pineapple, etc . . .

I love this herb butter. Try:
1. sauteing slices of zuchinni and squash in it
2. Grill a piece of fish or chicken, make a few slices in the top and then places slices of herb butter on top. The butter will melt and create a beautiful kind of sauce.
3. Spread on slices of bread and broil for a quick garlic bread.
