Whole Wheat Pancakes



I'm really loving the wheat grinder I got for Christmas. (Thanks Mom and Dad!) It really embodies the way I want to cook and eat. Right now I grind a whole bunch of wheat and store the flour in the freezer. I was happy that my whole family loved this recipe of Whole Wheat Pancakes, from Cooking Light. They are a little more substantial than a traditional pancake, perfect for a cold, winter morning. I'd love to hear about your favorite whole wheat recipes.

I love my wheat grinder too! I don't ever buy flour anymore. I have just substituted wheat/spelt flour for all white flour. (unless I buy hamburger buns or tortillas from the store) I made a pie crust the other day out of freshly ground spelt flour and it was fantastic. I would way rather have a whole wheat pancake rather than regular pancake.

I want a wheat grinder! and I also want to know what spelt is . . .

I love whole wheat pancakes but my kids will only eat them is they are half wheat/half white.

Whole wheat pancakes are great with applesauce on top too.

I have two wnole weat receipes that I enjoy making: Waffles this is great because you make the batter and it has to sit in the fridge overnight and then you just make however many you want and put the batter back so you have fresh every morning!
2 cup wheat
1T baking soda
heaping 1/2 T baking powder
2T brown sugar
1t salt
mix dry ingredients and add
2 1/2 cups milk (or use 2 1/2 cups water with 1/2 cup dry milk)
1/2 cup oil
6 eggs
It does not look or smell very good in the morning but the waffles are excellent! Kate loves them with blueberries and banannas on top.

Wheat Bread
combine in order:
1/2 cup oil
1/2 cup honey (or sugar I like honey)
3 3/4 cup warm water
3T yeast
1 1/2 T salt
9 1/2 cup whole wheat (give or take)

knead in mixer 5-7 min
rise till double (about an hour)
mold into 3 pans rise another 20-30min bake at 350 for 35 min

i struggle eating anything but whole wheat pancakes now. i loooove them. my recipe uses wheat germ in it too! adds a great full flavor to them.
