Tzaziki & Pita Chips




After bringing pita chips and tzatziki to a potluck, I got a few requests for the recipes. Here they are:

Tzatziki
This is Ina Garten's version (I, without fail, LOVE all her recipes). It's a Greek dip/sauce often served on gyros. The only difficult part is thinking ahead; you have to let the plain yogurt and cucumber drain for a few hours. She suggests putting them in a cheesecloth lined strainer. I didn't have cheesecloth on hand so I just stuck them in two different colanders placed over bowls and stuck them in the fridge overnight. It did the job nicely. Next time I'll use Fage Greek Yogurt (it's so thick, I don't think you'd have to really drain it.) You can serve it with pita chips (recipe below), or I love it with Jenni's Chicken Gyros. Fage makes a tzatziki, you can find it in some grocery stores.

Pita Chips
Cut each piece of pita into 8 triangles. Do as many as you want. Place on baking sheet (you want just one layer, so if you are doing a lot, use two separate baking sheets). Drizzle with a generous amount of olive oil and toss so the triangles are coated. Sprinkle with kosher salt. Bake in oven at 350 for about 10 minutes, stir (or turn), bake for 5 minutes more.

You can also use tortillas and any other "toppings." We like to do butter and cinnamon sugar for a sweet chip.
