Chocolate Crinkle Cookies
Do you remember eating these as a kid? They served them in our lunchroom and that was my favorite lunch day. (Although it always seemed like the best desserts were served with the nastiest main dishes, like peanut butter bars (yum!) with fish sticks (yuck!).) I found my recipe I had typed on a 3x5 card in the ninth grade as part of a homec project. Colin helped me make them and they were better than I remembered. Crusty outside but really chewy and soft in the middle, just like I like them.
Chocolate Crinkle Cookies
1/4 c. melted butter
3/4 c. cocoa
1/2 c. vegetable oil (I used more melted butter)
2 c. sugar
4 eggs
2 t. vanilla
3 c. flour
1/2 t. baking powder
1/2 t. salt
1 c. powdered sugar
Put melted butter and cocoa in mixing bowl. Add oil and sugar, blend well. Add eggs and beat well. Add vanilla and dry ingredients (except for powdered sugar) and mix well. Scoop out and roll each cookie in powdered sugar. Bake at 350 for 10-12 min. Do not overbake.

We always put buttercream frosting between two of these cookies and call them HOMEMADE OREOS! A family favorite! (but yes I DO remember having these at dear old AF high...and werent they really BIG?!):)
