Apple-Pumpkin Muffins



I love the fall flavors in this recipe.

whisk together:
2 1/2 C. flour
2 C. sugar
1 t. soda
1/2 t. salt
1 T. pumpkin pie spice
combine and then add to above:
2 eggs, beaten
1 C. pumpkin
1/2 c. oil (or melted butter)
2 C. finely chopped apples
Fill muffin cups. Top with streusal topping. Bake at 350 for 35-40 minutes.
Streusal Topping:
2 T. flour
1/4 c. sugar
1/2 t. cinnamon
whisk together then cut in:
4 teaspoons butter

Thanks for a great recipe using pumpkins and apples. I have leftover pumpkin from pumpkin pancakes (which were tasty and the kids gobbled them up.) and as a bonus I get to do something with my apples. Thank you Erin for all your great ideas!
