Chocolate White Chocolate Chunk Cookies



What to bring to the "Goodbye, We're Moving to Kansas" Party for the Rathers when I've only given myself one hour to make something and I have no chocolate chips in the cupboard?

Chocolate White Chocolate Chunk Cookies
Makes 40-48 cookies

1/2 lb. unsalted butter
1 C. brown sugar, packed
1 C. sugar
2 t. vanilla
2 eggs
2/3 C. unsweetened cocoa
2 C. flour
1 t. baking soda
1 t. salt
1 1/2 lbs. white chocolate, coarsely chopped

Preheat oven to 350.

Cream butter and two sugars until light and fluffy. Add vanilla, then eggs, one at a time and mix well. Add the cocoa and mix again. Sift together the flour, baking soda, and salt and add to the chocolate with the mixer on low speed until just combined. Fold in the chopped white chocolate.

Drop the dough on a baking sheet lined with parchment paper, using a 1 3/4 inch ice cream scoop or a rounded tablespoon. Dampen your hands and flatten the dough slightly. Bake exactly 15 min. (the cookies will seem underdone). Remove from the oven and let cool slightly on the pan, then transfer to a wire rack to cool completely.

This wouldn't really work for me because if I don't have chocolate chips in the house then for sure I don't have white chocolate.

Hi Erin,

Please address this on your blog:

My kids get home from school between 3-4 p.m. We don't have dinner until 6 pm (something new this year). I need a snack that is yummy and filling to last them until 6 p.m. It needs to be more than cookies or crackers or fruit. I'm thinking protein... Any suggestions?

Remember school started for us on Monday.
