Sunday Dinner


















Salmon, Spinach, and Potatoes Baked in Parchment

Apricot and Berry Tart with Cornmeal Crust

Find the recipe for the salmon here. It's so fun to serve, it's a half circle shaped packet of parchment. When you open it you see layers of salmon, spinach and potatoes garnished with lemon slices and caper/garlic/parsley butter. The flavors meld perfectly. It's so yummy and light and you feel good after eating it.

Rustic Potato Bread (from Baking with Julia) . . . I'll send you to this blog for the recipe. Note: Unlike the blog author, I use regular unbleached flour and I use a mixer.

Apricot and Berry Tart with Cornmeal Crust . . . When we lived in Santa Clara, we had three big apricot trees on our lawn. They were glorious. I've never tasted apricots that compare. We loved making apricot desserts, this is one of our favorites. I originally got this recipe from Martha Stewart (June 1998), but you can find it here.

wow. erin you are sooooo far beyond where my cooking skills are. i don't think i've even attempted anything called 'rustic' and i know i haven't ever used parchment paper. have you always been such a gourmet cook? teach me!

I tried the apricot berry tart--and even tho I made some adjustments due to only having blue berries and not having the right sized pan it was delicious! Thanks for the tip. Mom Kelly
