1 1/2 c. Semi-sweet chocolate
chips
1 T. vegetable shortening
approx. 1 pint raspberries
Pick over raspberries and place the best ones on a cookie tray lined with waxed paper. Make sure they aren't touching. Freeze until hard (30 min. in a deep freezer). Meanwhile melt chocolate and shortening in the top of a double broiler set over a pan of simmering water. Using a small spoon, place a few berries in the chocolate, roll around and spoon back onto the tray. When all the berries are coated put back in freezer for just a few minutes to let them firm up. Don't freeze too long, it will make the berries to hard and when they defrost they'll be mushy. You want the chocolate solid and the berries cold.
Best eaten right away.

You have no idea how happy I was to see your "little" care package on my doorstep! THANK YOU so much for the delicious goodies. Those blackberries and raspberries...I'm not sure there will even be enough to cover in chocolate. Mmmm...

And by there not being enough, I meant that they are almost gone and there won't be enough left.
I didn't think anythhing could be better than cc strawberries. I just happen to have raspberries right and I am going to try it right now!
