Piano Recital and Cupcakes




Last night was my semi-annual piano recital. I have such great students. I really enjoy each one of them. I count this as a huge blessing, never before in my piano teaching career have I had such a group of solid, fun and wonderful students. Although their musical talents vary, they are all really talented. Our theme was jazz and blues. They all worked so hard on their pieces. Afterwards we snacked on Coconut Cupcakes. The kids weren't as excited about them as I was (who knew coconut was gross?) They are decadent and rich and yummy. The addition of almond extract in the cupcakes and the frosting make these irresistible. The recipe is Ina Garten's, so you know it's fantastic. Find it on this blog.

mmm i love this recipe! esp because it calls for a pound and a half of butter, a pound of cream cheese, and 5 eggs. can't go wrong with that delicious combination.

Yes, they would be good without the coconut. There is coconut in the cake part as well as on top. But you could omit it from both. You'd be left with a great white cupcake with rich cream cheese frosting.
