Avocado - Mango Sauce
Still trying to get my fix of summer foods before they are gone. Two of my favorites: avocado and mango. I LOVE this sauce with grilled chicken. Also yummy with fish. Tip on cutting the cucumber: peel then slice lengthwise, scrape seeds out with spoon and dice.
Avocado Mango Sauce
serves 6
2 avocados
3 T. lime juice
1 mango
1 small cucumber
2 scallions
3 T. cilantro leaves
1 small jalapeno pepper
1 t. salt
1/4 t. pepper
Cut avocados, toss with lime juice. Add mango and remaining ingredients. Toss gently, season with salt and pepper. Serve within 1 hour or store in airtight container, in the fridge up to 3 hours.

Erin, for some reason I can't post on your let's dish posting. However, the avacado sauce looks great. I always choose restaurant offerings based on if there's avacado or not.
Anyways, there was an article in a magzine this month detailing how you could do this sort of thing at home with four friends. Probably for lots cheaper. We could even get the cookbooks from these places (i've seen them reviewed) and pick a few to try or try a few favorites. Is anyone game? I'd love to host it.

So, I can't leave a comment on the make ahead meal post but I wanted to tell you I had never heard of such a thing and was very intrigued. Thanks for the info.
I buy them at the greatest grocery store ever. And if anyone doesn't know where that is, then I will have to tell you: Trader Joe's.

And about the Let's Dish--I just went for my 2nd session yesterday and signed up for a 3rd next month. Our Boston based Let's Dish places are cheaper--2.38 per person--$200.00 for 12 meals. And it has been well worth the money. I pick my kids up from school and we stay at the playground for a few hours every day, but I still produce a dinner that looks and tastes like I spent 3 hours in the kitchen preparing it. Just take it out of the freezer and pop it in the oven, and you're ready to eat in 30 minutes. It's the best!
