My favorite pina colada. Make sure you use cream of coconut not coconut milk. You can find cream of coconut by the drink mixers and other alcohol in the grocery store. It is so good you might want to eat it straight out of the can. I also like to use frozen pineapple from Trader Joe's. If you use frozen pinapple, cut back on the ice a little.
2 cups cubed pineapple
1/3 cups sweetened cream of coconut, such as Coco Lopez
1 T. fresh lemon juice
1 cup ice cubes
optional garnish: sweetened coconut, toasted in the oven
Combine all ingredients in a blender. Pour into tumblers and serve immediately.
